Le Saint-Paul is an authentic 16th century private residence (built in 1511), converted to a 4 star Hotel in 1989 and the only one situated at the very heart of the medieval village of Saint-Paul-de-Vence, 15 kms from the International Nice Airport.
Acquired in 1991 by Olivier Borloo, then Managing Director of Relais & Chateaux, Le Saint-Paul became a member of the "Finest Chain of Hotels in the World" in 1992.
Olivier Borloo has continued to refine the warm Provencal decoration created by the famous Parisian interior designer Jean DIVES, sadly no longer with us today but immortalised by his famous Soulea-ado fabrics.
In 2002, The International Guide of Relais & Chateaux joint 452 charming and refined Hotels and Restaurants in 43 countries.
Le Saint-Paul has 15 rooms and 4 apartments, all air-conditioned and equipped with satellite television, private room safe, minibar and fully equipped bathroom.
The village-side bedrooms overlook the Rue Grande whereas from the valley-view rooms, one can admire the panorama on the valley of Saint-Paul with the Mediterranean in the background.
Four apartments complete our range of accommodation, one has a nice terrace with a splendid view overlooking the valley and another one can accommodate a family in its two-bedroom suite.
All the bedrooms and apartments are decorated in the most pure of Provencal style with Soulea-ado, Pierre Frey, Manuel Canovas and Rubelli?s fabrics.
The living room and bar offer a warm welcome thanks to a Provencal theme, an imposing stone fireplace, a library and charming collection of 19th century Barbotine porcelain.
The recent years have witnessed the transformation of Le Saint-Paul's Restaurant, now enlarged and completely redecorated. The vaulted dining room retains its 16th century charm and is enhanced by a Provencal 'trompe l'?il' (painting of Jacques Margerin), as well as the other one which has been embellished with a fountain.
In Summer, we serve light and refreshing dishes with decidedly Mediterranean flavours on our flower-decked terrace sheltered by the ramparts of Saint-Paul.
From the 'a la carte' menu, you will be able to taste the 'Lobster and Red Pepper Cannelloni served with its Bisque Cream', ' Roasted Double Veal Cutlet with Truffles', 'Mediterranean Bass with Lemon in Clay Crust'. The Chef is changing the Menu four times during the season.
On March 2000 the restaurant has been awarded with its first Michelin Star.
